A Healthy Quick Breakfast: Chia Pudding
We get it - Mornings can be a hectic time and the last thing on your mind is finding a healthy option while juggling hungry kids or prepping for that morning zoom call. That’s why this recipe is perfect because it takes maybe 10 minutes to put together and it is good for 7 days! Trust us, once you get a taste of this, you’ll be making a batch every week. *Bonus* It's vegan!
Chia Pudding Recipe:
2 c. unsweetened soy or almond milk
1/2 c. chia seeds
2 tbsp. maple syrup [plus extra for serving]
1 1/2 tsp. vanilla extract
1/4 tsp. salt
2 cups of any fruit to top
1/4 c. toasted coconut flakes or almond slivers
Whisky soy milk, chia seed, maple syrup, vanilla and salt together in bowl. Let mixture set for 15 min., then whisk again to break up any clumps. Cover bowl with plastic wrap and refrigerate for at least 8 hours or up to 1 week.
Top individual portions oof pudding with fruit, coconut, almonds and drizzle with maple syrup to taste before serving.
